As a child my parents took me to the wild harvests each spring to collect fresh sap from mature birch trees. Today, my birch sap is still sustainably hand-harvested in pristine forests for a few weeks in the spring when the trees fill with new vitality! Nutrients stored in the roots during winter are drawn up into the trunk, bringing new energy to the budding branches. During this short period, the birch sap is carefully tapped by experts. For the harvest only older trees are selected, providing up to 10 quarts of fresh sap every day. I’m delighted to bring you this gift from nature!
